Tambo na Universidade do Gana. O Prof. Saalia \u00e9 um l\u00edder cient\u00edfico de renome internacional, com foco na seguran\u00e7a alimentar, na qualidade dos alimentos e na minimiza\u00e7\u00e3o das perdas e do desperd\u00edcio p\u00f3s-colheita. <\/p>\n\n<p>Quando foi nomeado C\u00e1tedra de Investiga\u00e7\u00e3o Africana O.R. Tambo, o Prof. Saalia falou da sua inten\u00e7\u00e3o de centrar a investiga\u00e7\u00e3o e as atividades de mentoria nos alimentos ind\u00edgenas. Numa recente visita institucional, isso ficou patente nos projetos de investiga\u00e7\u00e3o apoiados. Os estudantes de p\u00f3s-gradua\u00e7\u00e3o est\u00e3o a concentrar-se na investiga\u00e7\u00e3o de alimentos utilizados para resolver a malnutri\u00e7\u00e3o geri\u00e1trica e na integra\u00e7\u00e3o da an\u00e1lise de g\u00e9nero e sexo neste trabalho. Est\u00e3o a focar-se na cadeia de valor do tomate e em como aumentar o valor nutricional dos alimentos de rua. Est\u00e3o a utilizar modela\u00e7\u00e3o para compreender como o processamento alimentar de bolinhos de milho fermentado pode ser normalizado, com foco no mercado de exporta\u00e7\u00e3o no Gana. Est\u00e3o a realizar investiga\u00e7\u00e3o sobre o processamento alimentar inteligente de ananases rec\u00e9m-cortados para melhorar o valor nutricional e a seguran\u00e7a microbiana. Est\u00e3o a explorar como valorizar cascas de banana-da-terra como alternativa ao pl\u00e1stico como material de embalagem, contribuindo para a investiga\u00e7\u00e3o sobre a economia circular. A investiga\u00e7\u00e3o sobre diferentes tipos de hort\u00edcolas de folha verde existentes no Gana ir\u00e1 informar como o Gana pode apoiar um maior consumo de \u00e1cido f\u00f3lico para melhorar os cuidados de sa\u00fade infantil e materna. E est\u00e3o a explorar m\u00e9todos para desintoxicar aflatoxinas em leguminosas e amendoins utilizando microrganismos.        <\/p>\n\n<p>Esta investiga\u00e7\u00e3o est\u00e1 a posicionar esta c\u00e1tedra de investiga\u00e7\u00e3o como um centro de refer\u00eancia para a forma\u00e7\u00e3o de cientistas de alimentos e engenheiros de processos alimentares, para combinar ci\u00eancia, tecnologia, engenharia e sistemas sociais, a fim de enfrentar os desafios existentes nos sistemas alimentares e transformar <a>alimentos ind\u00edgenas <\/a>em produtos globalmente aceit\u00e1veis e competitivos. Implementada com recurso a metodologias multidisciplinares, a c\u00e1tedra integra engenharia de processos alimentares, qu\u00edmica alimentar, microbiologia alimentar, engenharia agr\u00edcola, ci\u00eancias sociais e desenvolvimento empresarial. <\/p>\n\n<p><em>A Iniciativa de C\u00e1tedras de Investiga\u00e7\u00e3o Africana O.R. Tambo (ORTARChI) combina objetivos pol\u00edticos, de desenvolvimento e de ensino superior. Visa homenagear uma figura de destaque no desenvolvimento da unidade africana; ter um impacto catalisador no desenvolvimento de infraestruturas de investiga\u00e7\u00e3o nos pa\u00edses benefici\u00e1rios; e contribuir para a produ\u00e7\u00e3o de conhecimento e compet\u00eancias de alto n\u00edvel, em alinhamento com a Agenda 2063 da UA e a STISA 2024. Foram atribu\u00eddas dez (10) C\u00e1tedras de Investiga\u00e7\u00e3o Africana O.R. Tambo em sete pa\u00edses, nomeadamente Botswana, Burkina Faso, Gana, Mo\u00e7ambique, Tanz\u00e2nia, Uganda e Z\u00e2mbia.
