{"id":21692,"date":"2024-09-30T12:49:35","date_gmt":"2024-09-30T11:49:35","guid":{"rendered":"https:\/\/sgciafrica.org\/des-chercheurs-ougandais-offrent-une-bouee-de-sauvetage-aux-boulangers\/"},"modified":"2026-02-12T13:35:06","modified_gmt":"2026-02-12T13:35:06","slug":"des-chercheurs-ougandais-offrent-une-bouee-de-sauvetage-aux-boulangers","status":"publish","type":"post","link":"https:\/\/sgciafrica.org\/fr\/des-chercheurs-ougandais-offrent-une-bouee-de-sauvetage-aux-boulangers\/","title":{"rendered":"Des chercheurs ougandais offrent une bou\u00e9e de sauvetage aux boulangers"},"content":{"rendered":"\n<p><\/p>\n\n<p>Des chercheurs ougandais ont \u00e9labor\u00e9 un ensemble simple de directives pour aider les boulangeries \u00e0 se conformer aux normes de s\u00e9curit\u00e9 alimentaire \u2013 ce qui pourrait les sauver de la fermeture.<\/p>\n\n<p>Les nouvelles normes pour la production de pain et de g\u00e2teaux ont \u00e9t\u00e9 con\u00e7ues pour \u00eatre pratiques et facilement compr\u00e9hensibles par tous les boulangers, quel que soit leur niveau de formation.<\/p>\n\n<p>Introduites par le Bureau national de normalisation de l&rsquo;Ouganda (UNBS), elles offrent aux boulangers une voie claire vers la conformit\u00e9.<\/p>\n\n<p>Charles Muyanja est professeur au d\u00e9partement de technologie alimentaire et de nutrition de l&rsquo;universit\u00e9 de Makerere, en Ouganda, et membre de l&rsquo;\u00e9quipe de projet qui a \u00e9labor\u00e9 les nouvelles lignes directrices, avec le financement de la Science Granting Councils Initiative (SGCI).<\/p>\n\n<p>Il a d\u00e9clar\u00e9 que ces mesures visaient \u00e0 r\u00e9glementer les produits de boulangerie vendus pour la consommation publique.<\/p>\n\n<p>Dans le pass\u00e9, a d\u00e9clar\u00e9 M. Muyanja, \u00ab\u00a0il suffisait d&rsquo;avoir de la farine et quelques ingr\u00e9dients pour faire du pain ou des g\u00e2teaux \u00e0 vendre, souvent sans se soucier de la qualit\u00e9 ou de la s\u00e9curit\u00e9, ce qui se traduisait par des produits mal pr\u00e9par\u00e9s et la fermeture des boulangeries non conformes\u00a0\u00bb.<\/p>\n\n<p><br\/>Il a indiqu\u00e9 que le projet impliquait des consultations approfondies avec les parties prenantes du secteur de la boulangerie, notamment les boulangers, les d\u00e9taillants et les r\u00e9gulateurs, afin d&rsquo;identifier les lacunes dans leurs connaissances.<\/p>\n\n<p><br\/>\u00ab\u00a0Divers acteurs de la cha\u00eene de valeur pour identifier les lacunes standard dans leurs connaissances\u00a0\u00bb, a-t-il d\u00e9clar\u00e9.<\/p>\n\n<p><br\/>Muyanja, qui est \u00e9galement directeur de Nakku Food Safety Consults, a ajout\u00e9 que l&rsquo;UNBS a cr\u00e9\u00e9 un texte simple, qui peut \u00eatre traduit dans diff\u00e9rentes langues et visualis\u00e9 par des images.<\/p>\n\n<p><br\/>Selon lui, le projet est n\u00e9 de la constatation que de nombreux employ\u00e9s de boulangerie n&rsquo;avaient pas re\u00e7u d&rsquo;\u00e9ducation formelle et avaient du mal \u00e0 comprendre et \u00e0 appliquer les normes originales.<\/p>\n\n<p><br\/>En cons\u00e9quence, les taux de conformit\u00e9 \u00e9taient faibles et de nombreuses entreprises ont d\u00fb fermer leurs portes.<br\/>Pour maintenir les progr\u00e8s, Muyanja a d\u00e9clar\u00e9 qu&rsquo;il \u00e9tait important de s&rsquo;adresser aux boulangers pour les encourager \u00e0 mettre en \u0153uvre les normes.<\/p>\n\n<p><br\/>\u00ab Si [on] leur montre comment les normes contribuent \u00e0 l&rsquo;acc\u00e8s aux march\u00e9s internationaux ou r\u00e9gionaux et comment leurs revenus augmenteront gr\u00e2ce \u00e0 la mise en \u0153uvre, l&rsquo;application et la conformit\u00e9 \u00e0 la norme augmenteront \u00e9galement \u00bb, a ajout\u00e9 Munyanja.<\/p>\n\n<p>Il a d\u00e9clar\u00e9 qu&rsquo;il \u00e9tait n\u00e9cessaire de former et d&rsquo;\u00e9duquer les gens pour qu&rsquo;ils comprennent bien les normes et les mettent en \u0153uvre correctement.<\/p>\n\n<p>M. Muyanja a toutefois soulign\u00e9 que le co\u00fbt \u00e9lev\u00e9 de l&rsquo;\u00e9quipement et les taxes \u00e9taient des pr\u00e9occupations courantes soulev\u00e9es lors des discussions avec les parties prenantes.<\/p>\n\n<p>\u00ab Le gouvernement doit \u00e9laborer des politiques qui cr\u00e9eront un environnement propice \u00e0 la conformit\u00e9 des [boulangeries] aux normes \u00bb, a d\u00e9clar\u00e9 Muyanja.<\/p>\n\n<p>Ivan Muzira Mukisa, professeur et directeur du d\u00e9partement de technologie alimentaire et de nutrition \u00e0 l&rsquo;universit\u00e9 de Makerere, a d\u00e9clar\u00e9 que les normes simplifi\u00e9es constituaient une \u00e9tape positive vers l&rsquo;am\u00e9lioration de la qualit\u00e9 et de l&rsquo;uniformit\u00e9 des produits.<\/p>\n\n<p>Il a d\u00e9clar\u00e9 que les lignes directrices \u00e9taient particuli\u00e8rement utiles pour les petits boulangers, car les instructions claires permettent aux boulangers de les comprendre et de s&rsquo;y conformer plus facilement.<\/p>\n\n<p>\u00ab\u00a0Cette innovation est cruciale pour le secteur de la boulangerie en Ouganda, car elle simplifie la conformit\u00e9 et la rend plus accessible aux petites et moyennes entreprises\u00a0\u00bb, a d\u00e9clar\u00e9 M.
