Tambo \u00e0 l&rsquo;universit\u00e9 du Ghana. Le professeur Saalia est un leader scientifique de renomm\u00e9e internationale qui se concentre sur la s\u00e9curit\u00e9 et la qualit\u00e9 des aliments, ainsi que sur la r\u00e9duction des pertes et des d\u00e9chets apr\u00e8s r\u00e9colte.<\/p>\n\n<p>Lorsqu&rsquo;il a \u00e9t\u00e9 nomm\u00e9 titulaire de la chaire de recherche africaine O.R. Tambo, le professeur Saalia a fait part de son intention d&rsquo;axer ses activit\u00e9s de recherche et d&rsquo;encadrement sur les aliments indig\u00e8nes. Lors d&rsquo;une r\u00e9cente visite institutionnelle, les projets de recherche soutenus en t\u00e9moignaient. Les \u00e9tudiants de troisi\u00e8me cycle se concentrent sur la recherche d&rsquo;aliments utilis\u00e9s pour r\u00e9soudre la malnutrition g\u00e9riatrique et int\u00e8grent l&rsquo;analyse du genre et du sexe dans ce travail. Ils se concentrent sur la cha\u00eene de valeur des tomates et sur la mani\u00e8re d&rsquo;augmenter la valeur nutritionnelle des aliments vendus sur la voie publique. Ils utilisent la mod\u00e9lisation pour comprendre comment la transformation alimentaire des boulettes de ma\u00efs ferment\u00e9 peut \u00eatre normalis\u00e9e, en se concentrant sur le march\u00e9 de l&rsquo;exportation au Ghana. Ils m\u00e8nent des recherches sur la transformation alimentaire intelligente des ananas fra\u00eechement coup\u00e9s afin d&rsquo;en am\u00e9liorer la valeur nutritionnelle et la s\u00e9curit\u00e9 microbienne. Ils \u00e9tudient comment valoriser les pelures de banane plantain pour remplacer le plastique comme mat\u00e9riau d&#8217;emballage et contribuent \u00e0 la recherche sur l&rsquo;\u00e9conomie circulaire. La recherche sur les diff\u00e9rents types de l\u00e9gumes \u00e0 feuilles vertes que l&rsquo;on trouve au Ghana permettra de savoir comment ce pays peut favoriser une plus grande consommation d&rsquo;acide folique afin d&rsquo;am\u00e9liorer les soins de sant\u00e9 maternelle et infantile. Ils explorent \u00e9galement des m\u00e9thodes de d\u00e9toxification des aflatoxines dans les l\u00e9gumineuses et les arachides \u00e0 l&rsquo;aide de micro-organismes.<\/p>\n\n<p>Cette recherche positionne cette chaire de recherche comme un p\u00f4le de premier plan pour la formation de scientifiques de l&rsquo;alimentation et d&rsquo;ing\u00e9nieurs des proc\u00e9d\u00e9s alimentaires afin de combiner la science, la technologie, l&rsquo;ing\u00e9nierie et les syst\u00e8mes sociaux pour relever les d\u00e9fis existants dans les syst\u00e8mes alimentaires et transformer les <a>aliments indig\u00e8nes <\/a>en produits comp\u00e9titifs et acceptables \u00e0 l&rsquo;\u00e9chelle mondiale. Mise en \u0153uvre \u00e0 l&rsquo;aide de m\u00e9thodologies pluridisciplinaires, la chaire int\u00e8gre l&rsquo;ing\u00e9nierie des proc\u00e9d\u00e9s alimentaires, la chimie alimentaire, la microbiologie alimentaire, l&rsquo;ing\u00e9nierie agricole, les sciences sociales et le d\u00e9veloppement commercial.<\/p>\n\n<p><em>L&rsquo;initiative des chaires de recherche africaines O.R. Tambo (ORTARChI) combine des objectifs politiques, de d\u00e9veloppement et d&rsquo;enseignement sup\u00e9rieur. Il vise \u00e0 honorer une personnalit\u00e9 de premier plan dans le d\u00e9veloppement de l&rsquo;unit\u00e9 africaine, \u00e0 avoir un impact catalytique sur le d\u00e9veloppement des infrastructures de recherche dans les pays b\u00e9n\u00e9ficiaires et \u00e0 contribuer \u00e0 la production de connaissances et de comp\u00e9tences de haut niveau conform\u00e9ment \u00e0 l&rsquo;Agenda 2063 de l&rsquo;UA et \u00e0 la STISA 2024. Dix (10) chaires de recherche africaines O.R. Tambo ont \u00e9t\u00e9 attribu\u00e9es dans sept pays, \u00e0 savoir le Botswana, le Burkina Faso, le Ghana, le Mozambique, la Tanzanie, l&rsquo;Ouganda et la Zambie.
